Recently i have been travelling in the Middle East and meeting several key players in the baking and franchise industry, to here very similar comments from both market sectors.

Key skills and the ability to find key bakery staff trained and those that truly stand out or are capable of working closing with key specifications and those that have mastered the understanding and those that have the passion for the industry, the same can be said with the franchise sector in many ways, the difference between the two is the baking industry is still considered to be a “black art” in some way.

Bakers work at night and often the end results are seen everyday by the masses in the bakeries, supermarkets and in fact any location where they sell bakery products.

The industry has issues with lack of skilled people and the younger generation not wanting to get up early in the morning or work all night, there is something of a regeneration of the public view of the industry in many ways with the revival of TV shows making the industry look attractive……. the questions is what else can be done to maintain the current skills levels and develop the industry to the point of becoming more attractive and sexy!
